{"id":16503,"date":"2020-02-25T10:14:54","date_gmt":"2020-02-25T18:14:54","guid":{"rendered":"https:\/\/www.premierfitnesscamp.com\/?p=16503"},"modified":"2024-02-19T10:19:56","modified_gmt":"2024-02-19T18:19:56","slug":"southwest-breakfast-tacos","status":"publish","type":"post","link":"https:\/\/www.premierfitnesscamp.com\/blog\/eat\/southwest-breakfast-tacos\/","title":{"rendered":"Southwest Breakfast Tacos"},"content":{"rendered":"<p>Yes- you can still eat tacos for breakfast (or lunch&#8230; or dinner&#8230;) and meet your health and fitness goals!<\/p>\n<p>This recipe makes 2 servings&#8230;<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li>1 tsp Grapeseed Oil<\/li>\n<li>2 Eggs, whole<\/li>\n<li>4 Egg Whites<\/li>\n<li>1\/4 C Black Beans, cooked, low sodium<\/li>\n<li>2 Tbsp Cheddar Cheese, grated*<\/li>\n<li>1\/4 C Bell Peppers, chopped<\/li>\n<li>1\/4 C Onion, chopped<\/li>\n<li>1\/2 tsp Smoked Paprika<\/li>\n<li>2 Corn Tortillas, medium-sized<br \/>\n*Optional<\/li>\n<\/ul>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>Drain and rinse the black beans.<\/li>\n<li>Wash and chop the bell peppers and onions.<\/li>\n<li>Beat all eggs in a small mixing bowl and set aside.<\/li>\n<li>In a medium nonstick pan, heat the grapeseed oil until hot but not smoking. Saute the peppers, onions, and beans until the onions begin to become translucent.<\/li>\n<li>Add in the eggs and scramble together with everything in the pan. Slowly add in the smoked paprika and salt, to taste.<\/li>\n<li>Add the egg scramble to the center of each warmed tortilla and sprinkle with 1 Tbsp cheddar cheese.
